In September of 2020, the USDA, FSIS published a proposed final rule that would reduce the number of labels requiring sketch approval based on label claims. This would result in an increase of generic label approvals. In addition, the review of generic labels, submitted voluntarily for USDA FSIS approval would cease. Generic labels are not approved by the plant management or by the USDA inspector in the plant. Generic labels are classified as approved by meeting all the mandatory regulatory labeling requirements. This would place the burden of compliance on the plant management alone.
Schaffer Label Consulting was launched in October of 2020 to support small to mid-sized meat processors to navigate the USDA label approval process as a result of the changes to the USDA FSIS label approval program.

I am HACCP certified, a Certified SQF Practitioner and I am FSPCA PCQI. As a supplier to the meat industry, and then working in the meat industry, my experience has given me a unique prospective into the labeling needs of the meat industry.
